Mexico La Cuenca del Grijalva Organic is from a small cooperative in the state of Chiapas, Mexico. Desarrollo Sustentable de la Cuenca del Grijalva SPR de RL was established in 2015. Currently, the cooperative's smallholder producer members number 207. They reside in the municipalities of Amatenango de la Frontera, Bella Vista and Chicomuselo, markedly all part of the Sierra area of Chiapas. (Mexico La Cuenca del Grijalva, the mill and coffee processed there, translates to basin of the Grijalva. The Grijalva river is a 480-kilometer-long river that flows through Chiapas. It is one of the largest reservoirs in Mexico with a drainage basin spanning 134,000 square kilometers.)
The cooperative Desarrollo Sustentable de la Cuenca del Grijalva collects coffee and offers social and technical services to producer partners. As of 2018, organic certification was obtained. As a result their coffee is now sold at a premium, which translates to higher pay to producers - a direct benefit to their quality of life. Furthermore for the 2021-2022 crop, Desarrollo Sustentable de la Cuenca del Grijalva is working towards Fairtrade certification to further benefit members.
Mexico La Cuenca del Grijalva Organic is produced at an average of 1400 meters above sea level. It is grown and processed with techniques that uphold environmental stewardship and organic standards. Ripe cherry is hand-picked and floated in the receiving tanks three times to remove all impurities and unripe fruit. The cherry then passes through a machine pulper to remove the outer layers, leaving 90 percent of the mucilage on the bean. Subsequently, the coffee is fermented aerobically for 24 hours in water. Next, the coffee is agitated and washed thoroughly. Finally, parchment is patio dried for five days in the sun.
